Storage vs serving temperature
Wine storage temperature and serving temperature are not the same. Storage temperature is for long-term preservation — keeping wine in the best condition until you’re ready to drink it. Serving temperature is what the wine should be when you pour it. Your Thermador wine cooler should be set for storage; adjust before serving by removing the bottle ahead of time.
Recommended storage temperatures
Red wines: 55-65°F (13-18°C). Full-bodied reds (Cabernet, Syrah) toward the higher end. Lighter reds (Pinot Noir, Beaujolais) toward the lower end. Set your Thermador lower zone to 58°F for a good middle ground.
White wines: 45-55°F (7-13°C). Full-bodied whites (oaked Chardonnay) at 50-55°F. Light whites (Sauvignon Blanc, Pinot Grigio) at 45-50°F. Set upper zone to 48°F.
Sparkling wines: 40-50°F (4-10°C). Champagne and sparkling wines prefer the coldest settings. Store in the upper zone.
Rosé: 45-55°F (7-13°C). Store with whites in the upper zone.
Serving temperature tips
Reds: remove from the cooler 15-30 minutes before serving to warm slightly. Whites and sparkling: serve directly from the cooler — they’re stored near serving temperature. If a red feels too cold, cup the glass in your hands for a minute; if too warm, 5 minutes in the cooler brings it down.
Long-term aging
For wines you plan to age (5+ years), consistency matters more than exact temperature. Set the zone to 55°F and don’t change it. Temperature fluctuations — even within the “correct” range — stress corks and accelerate aging unevenly.
