How a vent hood captures cooking byproducts

Cooking generates steam, grease particles, smoke, and odors that rise naturally from the cooktop. A vent hood positioned above captures this rising air column and either exhausts it outside (ducted) or filters and recirculates it (recirculating).

The capture zone

Effective extraction depends on the capture zone — the area directly beneath the hood where rising air is pulled into the blower. This is why hood width should match or exceed cooktop width, and why mounting height matters. Too high, and cooking byproducts escape around the edges before reaching the hood. Too low creates a head-strike hazard.

Baffle filtration

Thermador uses stainless steel baffle filters — a labyrinth of metal channels that force air to change direction repeatedly. Each direction change causes grease particles to separate from the airstream and collect on the baffle surfaces. This design is more effective at high CFM than mesh filters and is completely dishwasher-safe — a significant maintenance advantage.

Blower and motor

The blower (centrifugal fan) creates negative pressure inside the hood body, pulling air through the filters and pushing it into the ductwork. Thermador offers internal blowers (inside the hood) and remote blowers (in the attic or exterior wall). Remote blowers reduce kitchen noise dramatically because the motor noise is isolated away from the cooking area.

Auto-on heat sensing

A thermistor on the underside of the hood monitors temperature. When cooking activity generates heat, the sensor detects the temperature rise and automatically activates the blower — even if you forget to turn on the hood. The sensitivity can be affected by grease coating the sensor over time, which is why regular cleaning is important.
