How infrared differs from standard gas grilling

A standard gas burner heats air, which then heats food through convection. An infrared burner heats a ceramic tile, which radiates energy directly to the food surface — similar to how the sun heats your skin through radiation, not hot air. This direct energy transfer is far more intense and efficient.

The ceramic tile

The infrared searing zone uses a porous ceramic tile positioned above a dedicated gas burner. Gas flows through the ceramic pores and ignites on the surface, heating the entire tile to extreme temperatures. The tile then radiates infrared energy downward — intense, even heat across the entire searing area with no cold spots.

Why the sear is better

Infrared radiation transfers energy to the food surface much faster than convective hot air. This creates the Maillard reaction (browning) in 60-90 seconds rather than several minutes. The rapid sear locks in juices because the interior doesn’t have time to overcook while the surface browns. The result: a perfect crust with a juicy interior — the hallmark of steakhouse-quality cooking.

Preheating is essential

The ceramic tile needs 5-10 minutes of preheating to reach full searing temperature. An under-heated tile produces uneven results. Once properly preheated, the sear zone operates at significantly higher temperatures than standard burners — food goes from perfect to burned quickly, so timing is critical.

Tile maintenance

Cracked or chipped tiles don’t radiate evenly — they must be replaced entirely. Grease buildup on the tile can cause flare-ups. Burn off residue after each searing session by running the infrared burner on high for 5 minutes with the lid closed.
