Speed selection
Don’t default to maximum speed — it’s noisy, wastes energy, and isn’t necessary for most cooking. Match speed to activity:
- Low (speed 1): Simmering, boiling water, light sautéing
- Medium (speed 2-3): Stir-frying, pan-searing, regular cooking
- High/Boost: Deep frying, high-heat searing, heavy smoke situations
Start early, run late
Turn the hood on before you start cooking — this establishes airflow before smoke and grease are generated. Use the delay-off timer (available on most Thermador hoods) to continue running for 10-15 minutes after cooking ends. This clears residual steam and odors that linger after you turn off the burners.
Filter maintenance = performance
A grease-saturated baffle filter can reduce airflow by 30-50%. Clean frequency directly affects extraction performance:
- Light cooking: monthly dishwasher cycle
- Regular cooking: every 2-3 weeks
- Heavy cooking (daily frying, wok cooking): weekly
Duct maintenance
Even with clean filters, grease gradually accumulates in ductwork. Inspect annually — if you can see grease buildup at the hood-to-duct connection, the interior is worse. Professional duct cleaning every 2-3 years prevents fire hazards and maintains CFM performance.
Backdraft damper check
The damper at the exterior duct termination should open freely when the hood runs and close fully when it stops. A stuck damper lets outdoor air (and insects) into the duct when the hood is off. Check annually — grease buildup is the usual cause of sticking.
