How induction heating works

Thermador induction cooktops generate heat through electromagnetic induction — an alternating current flows through a coil beneath the glass surface, creating a rapidly oscillating magnetic field. When a ferromagnetic pan (cast iron, magnetic stainless steel) is placed on the surface, the magnetic field induces eddy currents in the pan’s base. These currents generate heat directly in the cookware — the cooktop surface itself doesn’t generate heat.

Why Freedom Induction is different

Standard induction cooktops have fixed zones with single coils. Thermador Freedom Induction replaces fixed zones with a matrix of small coils covering the entire glass surface. A sensor array beneath the glass detects exactly where you place a pan, what size it is, and its shape. Only the coils directly beneath the pan activate — the rest stay off. Move the pan, and the active coils follow it in real time.

Efficiency advantage

Induction transfers 85-90% of energy directly to the food vs 40-55% for gas. Water boils roughly twice as fast as gas. The glass surface stays relatively cool because it’s heated only indirectly (heat transfers from the hot pan back to the glass). This makes induction safer and easier to clean — spills don’t bake onto a hot surface.

Cookware compatibility

Only ferromagnetic cookware works: cast iron, enameled cast iron, magnetic stainless steel. Aluminum, copper, glass, and non-magnetic stainless steel won’t heat. Test with a magnet — if it sticks firmly to the pan bottom, the cookware is compatible. Some “induction-ready” pans have a magnetic disc bonded to a non-magnetic body.

What cookware works with induction?

Is gas or induction more efficient?
